There are all sorts of fantastic places in the Catskills to buy, borrow, and settle in with a good book — from bookshops to libraries to cafes and bars (an IPA goes great with sci-fi). And if you prefer reading in the fresh air then the Catskills has more book nooks than a dictionary has words. Liberty, NY

INGREDIENTS
• 3 cups rolled oats
• 1 cup chopped pecans
• 1 cup unsweetened coconut chips
• 1/2 cup pumpkin/pepito seeds
• 1 ts kosher salt (or to taste)
• 1/2 cup light brown sugar (or to taste))
• 1/3 cup maple syrup
• 1/3 cup extra virgin olive oil
• 2/3 cup dried sour cherries or dried fruit of choice
PREPARATION
1. Preheat oven to 300. In a large bowl, mix together the oats, pecans, coconut, pumpkin seeds and salt. 2. In a small saucepan set over low heat (or microwave for approx 30 seconds), warm the sugar, syrup and olive oil until the sugar has just dissolved, then remove from heat. Fold liquids into the mixture of oats, making sure to coat the dry ingredients well. 3. Line 2 large baking sheets with parchment paper and spread granola over them. Bake until dry and lightly golden, approx. 30 minutes, stirring/checking granola a few times along the way. 4. Remove granola from oven and allow to cool to room temperature before adding dried cherries and transferring to a storage container.
